“Chaharmahal and Bakhtiari's Traditional Foods”


We all know that foods in every city are somehow adjusted to the climate of there.so based on this fact, foods which belong to Chaharmahal and Bakhtiari are mostly adjusted to the mountain's climate. most of them should contain so much amount of energy to keep them strong. Because we mostly face freezing cold weather in mountains and also, on the other hand living in mountains doesn’t have a normal lifestyle.so that’s why traditional local foods can mostly consist of meat or other energetic ingredients.
Some of the local foods in Chaharmahal and Bakhtiari are such as Verchaale Bread, Ash-e Dough, Tiri bread, leek omelet, Kale Jush, and Tas Kebab and etc.

 

Ash-e Dough 


Pea and beans and lentils are used in Ash-e Dough. The taste is absolutely so great which will make you fall in love for sure.

This city of Iran is full of nutritious plants that one of them is almost leek plant. That’s why there’s a food called leek omelet in there.

 

 

Taas Kebab


Taas Kebab is another local food which in contrast to another kind of kebabs is not made of lamb or beef but made of chicken. 

 

 

Bakhtiari Kebab


But Taas Kebab is not the only kind of Kebab which exist in Chaharmahal and Bakhtiari, we can say that this city has another kind of kebab called “Bakhtiari Kebab” or Kabab Bakhtiari. This kind of kebab in contrast to Taas kebab is made of meat which is beef or lamb. Mainly Fillet meat.

 

 

Kal jush


About Kal jush we would say that this meal is not served but rice but served by bread. Ingredients are whey, onion and water! That’s all! It can be considered as a kind of soup even, because it’s so watery.

 

Parvard Dough


It is another kind of Ash in this city. The difference between this Ash and other kinds of Ash is the rice which exists in it.

 

 

Omaj


Omaj is another kind of local foods (Ash) which is widespread over other cities in Iran. This meal consists of flour, whey, special plants used for Ash, onion, and lentil.

 

Kachi-e shir


Kachi-e shir is mostly made by Ranchers. It’s Made of flour and milk. And can be eaten a supper.

Fatir


Fatir is a sweet delicious bread that exists not only in Chaharmahal and Bakhtiari but also in other cities like Tabriz, Semnan, Arak, Hamedan, etc. Inside of this bread, it’s filled by a special kind of ingredients.

 

Agerdak


Agerdak is just as similar as Fatir but the difference is that it’s a bit sweeter than Fatir. This bread is baked on special occasions like when an infant has his first tooth or when a girl gets married.

 

Dam pokhtak


Dam pokhtak is considered a real food in this city because it has rice. Actually, rice which has meat or raisins inside. This meat and raisins are being fried before being added to the rice. 

Kufteh


Kufteh is another luscious food that is eaten by bread. Boiled rice, mountain plants, lentil, and some spices are added to each other. Then some balls are made from these ingredients and cooked on the oven!
